Buying "Extra Virgin Olive Oil" does not insure the highest quality oil. DOMA carries only the finest quality olive oils. High quality olive oil is rich in antioxidants. The best olive oil is made the way the Romans made theirs. Olives are picked by hand so as not to damage the skin or pulp. They are transported in well aerated containers and leaves and twigs are removed and then milled. The resulting olive paste is then stone pressed without the use of heat, hot water, or solvents within 48 hours of harvesting. The oil is left unfiltered as filtering removes many nutrients. The first pressing produces the best "extra virgin" oil, thus the term "first cold pressed". This produces the best olive oil.
