Farro, otherwise known as emmer wheat, was widely cultivated in the ancient world, but is now a relict crop in mountainous regions of Italy.

In Italy, farro bread (pane di farro) can be found in bakeries in some areas. Farro has been traditionally consumed in Tuscany as whole grains in soup. Its use for making pasta is a recent response to the health food market.

Emmer wheat is closely related to durum wheat.
